It might seem strange to us today that winter, a season of festive cheer and celebrations, was once a time for scary stories. But for those who lived in a world where days grew shorter and the fields lay barren, gathering around the fire and telling tales of ghosts and ghouls felt natural. Among these chilling stories, few were as enduring or as terrifying as those of Raw Head and Bloody Bones.

Raw Head and Bloody Bones is a centuries-old bogeyman whose origin has been lost to time. He goes by many names—“Rawhead,” “Tommy Rawhead,” and “Raw-Head-and-Bloody-Bones.” In some stories, "Rawhead" and "Bloody Bones" are treated as two separate ghouls. Despite the variations, the legend is consistent in its ability to frighten children and adults alike. Typically, Rawhead is depicted as a skull with teeth, while Bloody Bones is portrayed as a skeleton without a head. Together, they are said to abduct naughty children, cook them in a stew pot, and devour them.

Many English towns have their own versions of the Bloody Bones tale, often placing the ghoul in dangerous locations such as marshes or caves to deter children from venturing into unsafe areas. “As the nurse’s opiate to quiet a troublesome brat. See! There is Raw Head and Bloody Bones coming to fetch you. Raa! hoes aen bloote-beens” (Bellenden, 36).

The first recorded use of the term “Bloodybone” appears in a sermon from 1548, according to the Oxford English Dictionary. The legend was especially popular in England, Ireland, the Appalacian Region and the American South from the 18th to the 20th centuries. Even Thomas Jefferson referenced Raw Head and Bloody Bones in his writings, using the figure to symbolize fearmongering in political discourse.

The legend’s influence persisted into the 20th century, as seen in interviews conducted during the 1980s with women born around 1900 in Carrboro, North Carolina. One woman recounted:

I remember one nightmare I had: Old Raw Head and Bloody Bones came out and threw my brother in the fire, and my brother got out and threw Raw Head and Bloody Bones in the fire. But he ran under my bed, and oh, for weeks I was afraid to pass that bed. I guess I was five years old then. And I know a nephew of mine came along. They told him the story of Raw Head and Bloody Bones, and one day he went down to the garden, and during the night the dogs had dragged up an old cow’s head. That little fellow saw that and he screamed bloody murder. It was a raw head and bloody bones (Quinney 1980, 100).

The legend also lived on in the oral histories of formerly enslaved people in the United States. Rachel Adams, an enslaved woman born in Georgia, shared:

Us chillun was allus skeered to play in de thicket nigh de house ‘cause Raw Head and Bloody Bones lived der. I used to think I seed ha’nts at night, but it allus turned out to be somebody dat was tryin’ to skeer me (Work Projects Administration 1941).

Georgia Baker spoke of the enduring fear instilled by such tales:

Oh Lord! Us never played no games in slavery times, ‘cept jus’ to run around in a ring and pat our hands. I never sung no songs ‘cause I warn’t no singer, and don’t talk ‘bout no Raw Head and Bloody Bones or nothin’ lak dat. Dey used to skeer us chillun so bad ‘bout dem sort of things dat us used to lay in bed at night a-shakin’ lak us was havin’ chills. I’ve seed plenty of ha’nts right here in Athens. Not long atter I had left Crawfordville and moved to Athens, I had been in bed jus’ a little while one night, and was jus’ dozin’ off to sleep when I woke up and sot right spang up in bed. I seed a white man, dressed in white, standin’ before me. I sho didn’t say nothin’ to him for I was too skeered. De very last time I went to a dance, somepin got atter me and skeered me so my hair riz up ‘til I couldn’t git my hat on my haid, and dat cyored me of gwine to dances. I ain’t never been to no more sich doin’s (Work Projects Administration 1941).

Mary Colbert took a more pragmatic view:

Honey, there is no use to ask me about Raw Head and Bloody Bones. When folks started talking about that, I always left the room. It is a shame how folks do frighten children trying to make them get quiet and go to sleep. I don’t believe in ha’nts and ghosts. Since I have been grown, I have been around so many dead folks I have learned that the dead can’t harm you; it’s the living that make the trouble.

From English nurseries to the fields of Georgia, the legend of Raw Head and Bloody Bones transcended generations serving as both a tool of caution and a source of terror. While the stories may no longer dominate our winters, they remain a fascinating glimpse into the imaginations of those who came before us. If you find yourself around the fire this year, you might think to tell your company a chilling story of Raw Head and Bloody Bones.

After supper last night, by way of variety Anna, Miriam and I came up to our room, and after undressing, commenced popping corn, and making candy in the fireplace. We had scarcely commenced, when three officers were announced, who found their way to the house to get some supper, they having very little chance of reaching Clinton before morning, as the cars had run off the track. Of course we could not appear; and they brought bad luck with them, for our corn would not pop, and our candy burned, while to add to our distress the odor of broiled chicken and hot biscuits was wafted upstairs, after awhile in the most provoking way. In vain we sent the most pathetic appeals by each servant, for a biscuit apiece, after our hard work. Mrs Carter was obdurate until tired out with messages, she at last sent us an empty jelly cup, a shred of chip beef, two polished drumsticks, and half a biscuit divided in three. With that bountiful repast we were forced to be content, and go to bed.

This recipe is for the most basic, old fashioned popcorn balls. In the 1860s, popcorn balls were a popular treat bought from street peddlers or "candy boys".  Sometimes the balls were dyed red or other colors.  Sorghum and corn were two of the few things the south had during the war years. Shortly after the war there were a few purported children's deaths due to poisoned popcorn balls in newspapers. Whether they actually happened or were just to discourage children from eating them is unknown. 

This is a fun recipe to cook as a group over a fire and kids enjoy making and eating the balls. I used a mixture of honey and molasses for my popcorn balls but experiment and find what you like. You can also use a simple syrup made from sugar.

Old Fashioned Civil War Era Popcorn Balls


Ingredients:

- 16 Cups of popped Popcorn (1/2 Cup of un-popped kernels) 
- 2 Cups Syrup ( Sorghum, Molasses, Honey, Maple) 
- Butter or oil for coating hands.

Instructions: 

Boil your syrup in a medium saucepan until it reaches 235°F (soft ball stage). Pour the syrup over the popcorn and mix in with a spoon. Let cool until you can touch it with your hands. Coat your hands in butter, scoop up some popcorn and press it into balls. Let sit overnight if yo want to keep the ball shape or eat straight away.

Civil War Era Apple Pancakes Recipe

Civil War Recipe for Apple Pancakes

I was very interested to try this recipe as it has molasses, cornmeal, and apples, three flavors that were very common during the Civil War that have since fallen out of fashion. I found the recipe in
The American Economical Housekeeper and Family Receipt Book, 1850. The Housekeeper and Gardener (1858) stated to add "a little more flour than is given to a common pancake batter," so I added a bit more than I would for normal pancakes. 

We served ours with "maple molasses", as it was called then. They were very good. You can barely taste the cornmeal at all. We will be adding these to our regular food rotation. The recipe made about 12 pancakes so I would half it in the future.



Civil War Recipe for Apple Pancakes

Ingredients:

- 2 Cups Milk
- 1 Teaspoon Saleratus (Baking Soda)
- 1 Cup Corn Meal 
- 1 Cup Molasses
- 3 Apples, pared and minced 
- 3 +/- Cups Flour
- Fat or Oil for frying

Instructions:

Combine cornmeal, molasses, baking soda,minced apples, and milk. Mix in enough flour to make a slightly thicker than usual pancake batter. Fry in oil on medium heat until solid (about 1 minute). Flip pancakes over. Fry other side for another minute.

Sandusky Sand Tarts: 100+ Year Old Recipe



Did you know that the Sandusky Sand Tart is the official dish of the Maritime Museum of Sandusky in Ohio? Neither do they. I'm at that point in the Covid-19 quarantine where I am creating signature dishes for historical sites and museums. This post was made possible by the Sandusky Library and Jeremy Angstadt who created and forwarded me the book scan. If you're local or out that way, be sure to give them a visit.

I chose this recipe because it was marked it the book, and I love getting recipe input from previous cooks. Sand Tarts were a popular turn of the century dish and are included in many Pennsylvania Dutch and Amish cookbooks.

The Sandusky House-Keeper (Sandusky, Ohio) 1888


Sandusky Sand Tarts


Ingredients:

- 2 Cups Sugar
- 1 Cup Butter (2 Sticks)
- 3 Cups Flour
- 2 Eggs, reserving 1 egg white for brushing on top
- Cinnamon
- Sugar
- Blanched Almonds

Instructions:

In a mixing bowl, cream together room temperature butter and sugar. Add the eggs, reserving one egg white. Mix in the Flour. Roll out the dough on a floured surface to 1/8 of an inch thick. Cut into squares. Place sand tarts on a cookie sheet lined with parchment paper or grease. Brush the egg white and sprinkle sugar and cinnamon on the tops. Press an almond into the center.  Bake in a pre-heated oven at 300 degrees F for 20-30 minutes or until golden brown.

I made half the recipe and it produced about 20 3.5 inch cookies. The tarts spread a little while cooking so be sure to give them space on the pan. It tastes like a crunchy snicker doodle and would be very good with tea. I'm generally not a fan of crunchy cookies but these have a good flavor and texture. Thanks for coming to visit! Civil War Fruit Cake Recipe -150+ Years Old!



Fruitcake. I'm young enough to have never encountered a fruitcake in the wild. Its reputation had been cemented before I was a child. Likened to paper weights and door stops, fruitcake has disappeared from tables.  The theory that there is only one fruitcake in the world and people just keep regifting it to each other has expedited its demise.

Still there are diehard fans who can't have Christmas if there is not a fruitcake and I'm apt to believe that the real reason for the demise is the cost and care they take to make in a world that increasingly values quick and cheap.

Fruitcake has a long history. Nutritionally dense and long lasting, fruitcake like mixtures date back to at least Ancient Rome, but the modern recipe has its roots in the Middle Ages.  Richard Briggs includes a recipe for "Plum Cake" in his 1788 cookbook The English Art of Cookery that includes all the hallmarks of what we would call a fruitcake todayIn 1840, Queen Victoria and Prince Albert's wedding featured a highly decorated, 300 pound fruitcake popularising the choice for many future brides. By the 1860s fruitcake was a classic choice for Christmas and weddings.

This is my first attempt to make a fruitcake so I tried to find a simple recipe. I asked on Facebook what time period fruitcake I should make and many wanted to see a Civil War Fruitcake. So here it is. The recipe is from Godey's- the June edition as fruitcakes generally need to cure from 1 month to 6 months for the best flavors.



The recipe was very simple so I looked to E.F. Haskell's The Housekeeper's Encyclopedia (1861) for information on how to mix and bake the cake:
Rich Fruit Cake.—One pound of sugar, three-fourths of a pound of butter, worked together until very light; one wine-glass of brandy, one dozen ground cloves, half a nutmeg, a teaspoonful of ground cinnamon, ten eggs beat separately, the yolks to be used first, and afterwards the whites, one-fourth of a pound of sliced citron, two pounds of washed currants rubbed in flour and mixed in the cake with one pound of raisins cut fine, and one seeded and left whole or cut once, and one pound of sifted flour; stir in the citron, currants, and the chopped raisins, and lastly, the flour and whole raisins alternately; bake in a moderate oven in deep basins two hours. If the fire is strong, the heat should be decreased the last hour. Line the basins with buttered paper, and keep a piece over the top of the cake. Frost it and it will keep two months or longer if desired.

I ended up lining my pans with buttered paper and frosting my cake. I was interested in using rum to keep my cake soft so I did not try frosting it before storing it.


Civil War Fruit Cake


Ingredients:

- 2 Cups Butter
- 2 Cups Molasses
- 2 Cups Sugar
- 6 Eggs
- 2 teaspoons Baking Soda
- 1 Pound Raisins, Chopped
- 1 Pound Currants, Chopped
- 1/2 Pound Citron, Chopped
- 1 teaspoon Salt
- 1 Tablespoon Nutmeg, Ground
- 1 Tablespoon Cinnamon, Ground
- 1 teaspoons Cloves, Ground
~ 6 Cups of Flour


Instructions:

Preheat oven to 325°F.  In a mixing bowl, cream the butter, molasses sugar, salt, nutmeg, and cloves. Add a little water to your fruits and mix in a little flour to coat the fruits. Alternatively add fruits and mix in  flour to make a stiff batter. Beat your eggs and fold in at the end. Line your pans with buttered paper. Fill pans 2/3 of the way with batter and cover the tops with greased paper. Bake for 1 hour to 2 hours depending on pan size. Test the middle with a skewer.

This made 6 3x6 sized loaves. I baked them for an hour and 15 minutes.

The day after they were baked, the tops were hard. I used a skewer to poke holes half way down into the cakes and spooned rum over. I left the paper on and wrapped the cakes in plastic wrap then put them in a plastic container. Historically they would be wrapped in paper and kept in an airtight tin but I couldn't find one big enough. Some people wrap them in alcohol soaked cheesecloth first. I tried coating them with rum weekly unless they seemed soggy, then I skipped a week.

It is rumored you can keep fruitcake good for up to 25 years by storing them in powdered sugar. They apparently do last forever. There was one found from Robert Falcon Scott's expedition to Antarctica in the early 1900s that still appears to be edible and one being passed down from the Ford family for over a century.
 
There are 6 of my fruitcakes floating around in the ether and I hope to update you after everyone has tried them. I won't be trying mine until Christmas Day but will update with a photo when I cut mine open. I gave everyone the drunken fruitcake disclaimer. Can't get drunk off cake? I hope everyone has a good holiday and I'd love to hear if anyone tries this recipe.



UPDATE: I've updated with a picture of the inside. We ate this on Christmas and it was overall not bad. I didn't pour a final bit of rum on it before icing it I wish I had. It felt kind of soggy on the top and I didn't want it to be soggy. The flavor was nice an mild. I thought the flavors would be strong but they were very delicate and the fruits practically melted into the cake. The raisins definitely disappeared! I have one cake left so I'm going to keep feeding it and test it in 6 months to see if the flavor changes any.

Civil War Era Cheesikins Recipe, What?




Yes, I made this recipe just because of the name, and yes, it's an early cheese-based nibble snack. This recipe if from Cre-Fydd's Family Fare (1864.) A very similar recipe for cheesikins was printed in Godey's Lady's Book in 1865 as well.

The book gives a suggestion about how to serve the cheesikins, as a side dish to lamb and veal. They have a strong flavor from the mustard and pepper. I can't see eating a ton of these in one sitting but they are a nice change of pace that could be used to make an otherwise bland meal a bit more exciting  while using up stale bread.





Civil War Era Cheesikins Recipe


Ingredients:

- 4 ounces (1 cup) Parmesan Cheese (freshly grated)
- 3 ounces (3/4 cup) Breadcrumbs
- 4 Tablespoons Butter
- 2 Eggs, beaten
- 1/4 teaspoon Cayenne Pepper
- 1 teaspoon Ground Mustard
- 1/4 teaspoon White Pepper


Instructions: 

Mix all ingredients in a mixing bowl, cover bowl with a cloth and let it sit for an hour.  Preheat oven to 400°F.  Knead the dough, roll out to 1/8 inch and cut into triangles. Bake on a cookie sheet for 16-18 minutes.

18th Century Castile Soap: For Shaving, Laundry and Weight Loss


I've finally gotten around to making the soap I've been researching for the last few months! Castile soap is one of the most basic soaps out there. It was a common soap in the 18th century and is even still used today.

In the 18th century soap came in two forms: hard soap and soft soap. Hard soap traveled easier around the house but soft soap was cheaper and easier to make at home. Not all soap was home made; soap boilers manufactured soap in bulk and both hard soap and soft soap were available to purchase in stores by the pound. Soap boilers also worked as chandlers as the ingredients and processes were similar.

In colonial times, soap was made by leeching lye out of hardwood ashes. The lye was then mixed with a fatty acid, typically tallow, lard or oil. It was difficult to gauge the strength of lye. Mrs. Child stated in The American Frugal Housewife (1828), that you could test the strength of lye by seeing if the lye was strong enough to float a potato or egg.  Some 18th century books recommended buying it from a soap boiler, instead of trying to make it at home.1 The mixture was cooked over a fire and stirred until saponification took place. If hard soap was wanted, salt or unslaked lime was added to the mixture. The mixture was then poured into barrels or molds depending on the type of soap. Soap was then left to cure. Hard soap, like Castile soap benefits from a cure time of over 6 months.

Castile soap is a soap made with olive oil. It was sometimes called "white soap," "olive soap," or "Marseilles soap," the latter name describing the source of a large manufacturer. Colonists used this soap for everything from laundry to luxury toiletries.

Razor maker,  Benjamin Kingsbury, thought Castile was the best soap for shaving. "The best soap for the purpose of shaving which I have yet found ... is the Olive-soap, made with olive-oil by a person well acquainted with the process of soap-making, and who, in making it, had in view the vision of a thick and durable lather..."2 Many luxurious toiletries called for Castile soap as a base to hold fragrances.


Castile was also used medicinally. It was seen as safer than other soaps to take internally because olive oil was safe to ingest. One anecdote from a physician relates the treatment of a patient who suffered from "corpulence" and gout.

He began to take it July, 1754, at which time he weighed 20 stone and 11 pound...He took every night at bed-time, a quarter of an ounce of common home-made Castile Soap, dissolved in a quarter of a pint of soft water. In about two months time, he began to feel more freedom...his bulk was reduced two whole stone weight...3
Soap was also listed as an ingredient to make chocolate frothy and soap and chocolate was seen as a cure for rheumatic pains.4 Yikes!

I originally started looking into soap making because I read about the harms of antibacterial soap, many of which are now banned by the F.D.A. for causing problems with the brain, hormones,  immune systems and reproductive systems. On top of the health risk they also cause an environmental risk. After the soap goes down the drain, the antibacterials continue to kill, killing many healthy necessary bacteria and algae in our waterways. I was looking for a healthier alternative to use and ended up where I always do: Looking at what our foremothers were doing and found a perfect replacement. I didn't want to make this post a tutorial because soap making is dangerous and one post is not enough to teach the process but I will be making a post on how to make 18th century luxury wash balls using pre-made Castile which can be bought almost anywhere, so stay tuned for that!

WARNING:PHOTO HEAVY POST- The Mercer Museum and Early American Tools

I went to the place where they send good historians when they die.

As you all know, and pretty much anyone who knows me knows, one of my biggest passions in life is how people lived and prospered in the Early American, pre-industrial age. I don't know why it fascinates me so much in this age of "buy everything at a mega-store and hire a professional to do it," but it does. I feel like people have become so reliant on corporations for even the bare necessities of life.

Very few people can service any of the items we use on a daily basis, let alone, build one of these themselves. More often than not, the cry you hear when something breaks is "I'll have to buy a new one." So I am forever amazed at the ingenuity and usefulness of people in a time before industrial machinery was king. Seeing everyday tools and materials from hundreds of years ago just makes me giddy. So you can't imagine the brain explosion I had when I entered the Mercer Museum in Bucks County, Pennsylvania.

Henry Chapman Mercer was a wealthy eccentric who became very interested in pre-industrial tools and trades. He was fascinated by tools of the past he had heard of but never seen before and became a voracious collector of all things that related to Early American trades. He thought these forgotten, everyday objects were the real story of human progress and he used avant garde methods to display what was essentially trash when he was collecting in around the turn of the century. (If you aren't already packing for your visit to this museum, you should be. There's plenty of time to read this post when you get back.)

The collection currently contains over 40,000 artifacts, only 20,000 of which are on display. The museum is jammed packed with artifacts that relate to over 60 Early American trades, such as farming, textile production, glass making, coopering, shoe making, basket weaving, and ceramics making. Full disclosure: I spent most of the time looking right to left and up and down like a dog when someone is waving bacon in front of its face.

This is a beautiful, beaded Native American bag, from the temporary exhibit "Long May She Wave: A Graphic History of the American Flag." Forgive me for the upside down photo, I had to take it at an odd angle but the beading was too lovely to pass up.

Apparently, I'm the last one to know about this museum and heard lovely things from people on Facebook about just how awesome it is. It is definitely not one to miss if you are visiting the Philadelphia or Allentown areas. Have you been to the museum? What did you think?

This weekend, Eastern State Penitentiary hosted a historical prison food weekend. For those of you not from this area, Eastern State was established by an advocacy group, the Society for Alleviating the Miseries of Public Prisons, in 1829. The design was radical for the time period. 

Eastern State Penitentiary created the Pennsylvania System of rehabilitating prisoners. At the time, many believed that solitude and reflection in ones own self were the best way to free a prisoner of a future light of crime.

In the earliest times of the prison, prisoners were kept in isolated cells attached to an individual cement exercise garden. There were no doors leading to the cells on the inside of the prison, but each cell had a feeding hole, a small cement box surrounded by a heavy door.

Prisoners were not supposed to see or hear another person until their sentence was completed. Guards and workers wore socks over their shoes so that prisoners would not hear them walking.

Upon being brought in and let out of the cells, prisoners were made to wear sacks over their heads to prevent prisoners from seeing people or their location within the prison. All of this solitude was supposed to inspire repentance. The cells were revolutionary for the time period. Each cell had running water, flush toilets and central heating. They also had a skinny, open skylight.

It was a tourist attraction, even in the 1800s. When Charles Dickens visited in he wrote:

In its intention I am well convinced that it is kind, humane, and meant for reformation; but I am persuaded that those who designed this system of Prison Discipline, and those benevolent gentleman who carry it into execution, do not know what it is that they are doing...I hold this slow and daily tampering with the mysteries of the brain to be immeasurably worse than any torture of the body.
I had only been to the prison once before but it was at night, so I did not get to really look around. It was interesting during the day. Andy and I took an audio tour and then did a little bit of exploring on our own. They had some special booths set up where visitors could try prison food through the ages, starting with a basic cornmeal mush and ending with modern "Nutraloaf."

The food prisoners were fed in the early years of the prison was actually considered quite good food for the location and era. They had salt beef and cornmeal mush for us to try. The next thing they served was from the 1940s; it was hamburger steak and beets. The dishes were finished up with Nutraloaf, a tasteless but nutritious, loaf of food, used in modern times as a punishment.

Overall, a fun trip. Yes, we paid money to eat prison food. The people of the 1800s, would probably be speechless. :) The only other time Andy and I had visited the prison was a couple of years ago when a concert was held in 7 block 7, pictured above.
